Twelve seats around a live cedar fire. Ten courses, one pace — the pit dictates the evening, not the clock.
There is no menu on the table because there is no choosing — only the fire's decision, translated through a pitmaster who has spent nine years learning what cedar wants to say to brisket, and how long to let it finish saying it. Every seat faces the pit. There is nowhere else to look.
The counter was built to a fixed length on purpose — long enough to seat the room, short enough that the pitmaster can still talk to everyone in it. We turned down a larger space twice to keep this number.
"If we added seats, someone at the end would stop being able to smell the cedar catch. That's the whole reservation."
Seatings run Tuesday through Saturday, 7:30pm, roughly three hours. We hold the room to twelve — when it's full, it's full.
